Three Nine Eight
The main restaurant in the Hotel, overlooking Trou d'Eau Douce Bay,
Three Nine Eight is a dynamic eating experience. Working on several
levels, it resembles a marketplace with live cooking stations offering
a choice of cuisines. Serving breakfast, lunch and dinner.
The main Dining room of Three Nine Eight is on three different levels,
with the cuisines of nine countries presented in a 'culinary theatre'
by eight show kitchens.
Working on several levels, it's like a market place through which
guests can meander, choosing between traditional crepes on a marble
slab, a fresh green salad bar, an Asian noodle bar with rice paper
and coconut detailing, and a French-style tiled rotisserie and grill.
Diners can settle into one area for the evening, or mix and match
their food types a Western main course and Asian dessert, for example.
The Italian/Mediterranean corner offers a huge choice of antipasti,
freshly-made pastas and sauces, a pizza oven and rich desserts,
while the Bakery & Patisserie fills the air with the scent of
new-baked bread, croissants, pastries, pancakes and waffles, many
of them accompanied by home-made ice cream. There is a traditional
Rotisserie & Grill, featuring the classic French turning spits
as well as the vertical grills used in the Middle est, and serving
basket-roasted fish and chicken.
Beside it, windows look straight into the busy main kitchen. The
Asian corner is based on a Hong Kong-style noodle bar, with fabulous
wok dishes sizzling with flames and every type of noodle from Japanese
udon to Chinese mee.
The Salad Bar features an incredible display of decorative raw
ingredients red peppers, green pak choi, yellow sweetcorn - freshly-prepared
salads. Guests can choose from conventional cold salads of crisp,
cool vegetables or marinated warm salads, such as scallops or mushroom
or chicken on a bed of greens.
The Coffee and Tea Bar uses the latest coffee technology with
superb varieties of coffee available as fresh ground, brewed or
decaffeinated, and specialist tea varieties from Korea, China and
Japan (among others) each served in the appropriate teapot with
a timer to show the guest how long to wait.
398's ambience is casual and the décor reflects the cuisine
on offer a rice paper canopy and dark coconut details for the noodle
bar, a classic cube of Carrera marble for the crepe chef, a bakery
stand of woven wood, reminiscent of a bread basket, and an underlit
salad bar of crisp, green glass tiles.
Barlen's
The look is thatched and the feel is relaxed. Barlen's is designed
according to feng shui principles, with fiery under-lighting at
the bar and a water-filled moat sealed with glass beneath the clients'
feet. During the day, guests can choose from sushi and sashimi,
Western char-grills, Japanese grills, salads and appetizers - perfect
beachside Dining, which can be described as "Asian with a twist".
Near the Givenchy Spa, on the island adjoining the main Hotel,
Barlen's is open for lunch and dinner. Barlen's Bar adjoining the
restaurant provides a wonderful view across Trou d'Eau Douce Bay.
Sit back, relax and inquire about the special Zen and Now cocktails.
Sega Bar
Light refreshments, tropical cocktails and a wide variety of whiskies
are served at the Sega Bar situated in the middle of the main pool.
All the bars on the islands, including the Sega Bar, the Beach Bar
on the Ile aux Cerfs and Robinson's Bar on lot Mangénie,
serve sandwiches and snacks.
Safran
Safran Modern interpretations of classical Indian cuisine, set around
a tandoori-oven kitchen, overlooking Trou d'Eau Douce Bay. A far
smaller, more intimate Dining experience, seating just 56 people
for dinner, Safran unfolds around an open kitchen and tandoori ovens
which produce wonderful breads and smells.
Open sides framed by chic wooden shutters, mother-of-pearl bases
to its bar and tandoor ovens, cutlery styled like old Indian daggers,
beautiful glass and gold leaf plates, glassware that glows in the
light and elegant copper cooking hoods over the ovens create a chic,
designer-led ambience.
Its menu is highly sophisticated, combining traditional Indian
dishes with the sort of modern cooking techniques and contemporary
touches which are beginning to win Indian restaurants Michelin stars.
"We have been working with Vineet Bhatia of Zaika [the starred
London restaurant] for a year now" explains Patrick John, "and
we're combining estern spices and cookery traditions with European
methods and presentation styles - the result is exquisite, modern
Indian food". Safran combines delicate décor and mystical
ambience as the top Indian restaurant on Mauritius.
